Ramen Noodles

  • 500g bread flour
  • 200ml water
  • 5g salt
  • 5g "baked" baking soda

Instructions

  1. Measure out the dry ingredients and combine them together
  2. Slowly add water and mix with chopsticks, the slower the better
  3. Once the water is mixed, rub the flour together to try and have all the flour equally hydrated
  4. Transfer to a bag and rest for 30 minutes
  5. Step on the dough, and rest for 30 mins
  6. Dust with starch, rollout

Soup

  • Chicken Carcasses
  • Chinese Cabbage
  • Scallion
  • Sliced ginger
  • 1 clove of garlic
  • 1/2 cup of sake

Instructions

  1. Wash the chicken carcasses
  2. Boil the chicken carcasses for 1 minute and drain. This is to get rid of any impurities
  3. Place chicken carcasses back in pot, add cut scallions, ginger, chinese cabbage and sake
  4. Bring to boil
  5. When boil turn to simmer
