Ramen Noodles
- 500g bread flour
- 200ml water
- 5g salt
- 5g "baked" baking soda
Instructions
- Measure out the dry ingredients and combine them together
- Slowly add water and mix with chopsticks, the slower the better
- Once the water is mixed, rub the flour together to try and have all the flour equally hydrated
- Transfer to a bag and rest for 30 minutes
- Step on the dough, and rest for 30 mins
- Dust with starch, rollout
Soup
- Chicken Carcasses
- Chinese Cabbage
- Scallion
- Sliced ginger
- 1 clove of garlic
- 1/2 cup of sake
Instructions
- Wash the chicken carcasses
- Boil the chicken carcasses for 1 minute and drain. This is to get rid of any impurities
- Place chicken carcasses back in pot, add cut scallions, ginger, chinese cabbage and sake
- Bring to boil
- When boil turn to simmer
