Pork and Green Beans

Main Ingredients

  • 1 450g ground pork
  • 1 450g green beans, trimmed

For the Marinade

  • 1 teaspoon Shaoxing wine
  • 1 teaspoon oyster sauce
  • 1 teaspoon neutral oil
  • 1 teaspoon cornstarch
  • 1 tablespoon water

For the Sauce

  • 80 ml chicken stock or water
  • 2 teaspoons light soy sauce
  • 1 teaspoon dark soy sauce
  • 0.5 teaspoon sesame oil
  • 0.25 teaspoon sugar
  • white pepper
  • 30 ml vegetable oil (divided)
  • 1 slice ginger
  • 2 teaspoons cornstarch (mixed with 1 tablespoon water)

Instructions

  1. Heat 1 tablespoon of vegetable oil in a wok over medium-high heat. Add the green beans and stir-fry for 6-8 minutes, until they are tender and slightly blistered. Remove the green beans from the wok and set aside.
  2. Add the remaining 1 tablespoon of oil to the wok. Add the minced garlic and stir-fry for 30 seconds until fragrant.
  3. Add the ground pork to the wok and cook for 3-4 minutes, breaking it up into small pieces, until browned.
  4. Stir in the Shaoxing wine, soy sauce, oyster sauce, sugar, and white pepper. Mix well.
  5. Return the green beans to the wok and toss to combine with the pork and sauce.
  6. Add 1/4 cup of water and stir-fry for another 1-2 minutes, allowing the flavors to meld together.
  7. Serve hot with steamed rice.

Notes

  • Substitutions: You can use ground chicken or turkey instead of pork. For a vegetarian option, try crumbled tofu or plant-based ground meat.
  • Adjust the seasoning to taste by adding more soy sauce or oyster sauce if needed.
