Pork and Green Beans

- 1 450g ground pork
- 1 450g green beans, trimmed
For the Marinade
- 1 teaspoon Shaoxing wine
- 1 teaspoon oyster sauce
- 1 teaspoon neutral oil
- 1 teaspoon cornstarch
- 1 tablespoon water
For the Sauce
- 80 ml chicken stock or water
- 2 teaspoons light soy sauce
- 1 teaspoon dark soy sauce
- 0.5 teaspoon sesame oil
- 0.25 teaspoon sugar
- white pepper
- 30 ml vegetable oil (divided)
- 1 slice ginger
- 2 teaspoons cornstarch (mixed with 1 tablespoon water)
Instructions
- Heat 1 tablespoon of vegetable oil in a wok over medium-high heat. Add the green beans and stir-fry for 6-8 minutes, until they are tender and slightly blistered. Remove the green beans from the wok and set aside.
- Add the remaining 1 tablespoon of oil to the wok. Add the minced garlic and stir-fry for 30 seconds until fragrant.
- Add the ground pork to the wok and cook for 3-4 minutes, breaking it up into small pieces, until browned.
- Stir in the Shaoxing wine, soy sauce, oyster sauce, sugar, and white pepper. Mix well.
- Return the green beans to the wok and toss to combine with the pork and sauce.
- Add 1/4 cup of water and stir-fry for another 1-2 minutes, allowing the flavors to meld together.
- Serve hot with steamed rice.
Notes
- Substitutions: You can use ground chicken or turkey instead of pork. For a vegetarian option, try crumbled tofu or plant-based ground meat.
- Adjust the seasoning to taste by adding more soy sauce or oyster sauce if needed.
